Ingredients
4 c cooked brown rice
1/4 c scallions, finely chopped (less if they are very sharp)
2 carrots finely shredded
2 ribs celery, leaves removed, finely chopped
1/2 c bean sprouts
1 c thawed frozen peas
1/2 c cashews
1/3 c tamari
1 1/2 T sesame oil
8 oz. super firm tofu, cubed
Steps
- Mix all of the ingredients together in a large mixing bowl.
- Serve warm or room temperature.
