BBQ Tofu Tacos print friendly recipe
Print Recipe

Tacos filled with BBQ tofu, lettuce and baked potato or brown rice.

Ease: super quick
Type: entree
Prep Time: 15
Total Time: 15
Yield: 4 servings

Cook's notes

Bearitos make organic taco shells with low sodium and low oil and circle U Kosher. They are available at any health food store.

Make sure that your BBQ sauce does not contain additives or more than 6g sugar per serving.

Tofu comes ready to eat out of the package. Therefore if you are really in a pinch and cannot wait 40 minutes for the tofu, bake it for as long as you can. Less baking wil give you a softer dish.

Ingredients

16 oz tofu
BBQ sauce
Taco Shells
4 c cut and washed lettuce
sliced avocado
4 baked potatoes cut in cubes or 4 c Brown rice

Steps

  • Slice tofu about 1/2 " thick. Place in shallow baking pan and coat both top and bottom of tofu with barbecue sauce.
  • Place in 400° F oven, no convection. Bake 40 minutes until tofu is hard and glazed with barbecue sauce.
  • Warm the taco shells as per package instructions. Stuff as desired with the avoc ado, lettuce, potato and BBQ tofu. Serve hot.
