Festive Wild Rice print friendly recipe

Cook's notes

A bonus for busy chefs planning a holiday meal; This rice tastes even better the next day. So if it is more convenient, prepare it the day before your feast.

Ingredients

2 1/4 c wild rice
1 1/2 large red bell pepper
3 shallots or 1 onion
6 celery ribs
6 garlic cloves
1 lb. mushrooms
7 c water
3 1/2 T olive oil
1 t thyme
pine nuts for garnish

Steps

  • Wash, clean and place pepper, shallots, celery, garlic and mushrooms in food processor. Mince well.
  • Put the rice, water and minced vegetables in a large pot and bring to a boil. Reduce the flame to a low boil.
  • Cook about an hour until all but 1/2" of the water is gone. Turn off the flame and let the rice absorb the remaining water. Stir in olive oil and thyme. Garnish with pine nuts.
