Cook's notes

If you are using very sweet, flavorful apples, you can omit the lemon and honey/agave. Only use the lemon and honey/agave if you are trying to get rid of not so wonderful apples that do not have a good enough flavor to eat raw.

Ingredients

1 c date sugar
1 c rolled oats or oat flour
3/4 c safflower oil

10-12 apples cubed (I like to use fuji, gala or gravenstien.)
1/4 c agave syrup or honey (optional)
1/1/2 c raisins
1 T cinnamon
2 T arrowroot powder
2 T fresh lemon juice (optional)

Steps

  • Cut apples in 1" cubes
  • Preheat oven to 350° F Mix together apple cubes, agave or honey and lemon if necessary, raisins, cinnamon and arrowroot. Set aside.
  • Mix together date sugar, oat flour and oil. Press half of the mixture into a 9" x 13" baking pan.
  • Stir the apple mixture one more time and spread evenly over the oat mixture in the pan. Sprinkle remaining oat mixture over apple mixture.
  • Cover pan with parchment paper and then foil and bake in preheated oven for 1 1/2 hours until top is browned and apples are tender. Let cool about 20 minutes before serving.
